How many hits does it take to defeat it? I'm just curious because I've always thought it was more than eight. If anyone knows, feel free to post a message about it. Please and thank you!
Think of collecting all six Chaos Emeralds as like collecting all of Zero's parts in Mega Man X2 (I'm aware that Sonic 1 was released three years before Mega Man X2, by the way), it doesn't earn you anything special in return but it does reward you with the canon endings.
Plus, I think Sonic 1 and Mega Man X2 both had more of an emphasis on platforming rather than doing "this", or doing "that".
I don't understand the dislike for the original Sonic the Hedgehog, I thought it was a fantastic game and I used to really love playing it all the time, as well as the Japanese and Mega Play (Arcade) versions of said game.
I find it easier than say Sonic the Hedgehog 2 and Sonic the Hedgehog 3 & Knuckles because:
I was very skilled at Sonic 1 (I'm not sure if I'm still very skilled at it, it's been a very long time since I've played it).
I find Sonic 1's Final Zone to be easier than the entirety of Sonic 2's Death Egg Zone.
I found Sonic the Hedghog 3 & Knuckles to be pretty difficult.
For those who dislike the lack of a Spin Dash in Sonic 1, I'd suggest playing the mobile port Christian Whitehead made, the 3DS version, and the SEGA AGES version via the Nintendo Switch.

Am I the only one who actually loves both of those themes? I think they're suited quite well if you ask me.
