In every universe, Sonic either likes women or has no interest in dating at all. But there’s not one universe where he’s gay.

I have no problem with people adding LGBT characters into franchises like this one (and since I made a few of my own in relations to this franchise.)

But I would say no. It probably wouldn't be a good idea for Sonic.
